Mary Berry Red Cabbage (Print Version)

# Ingredients:

01 - 1 large red cabbage (about 1kg/2lb 3oz).
02 - 450g cooking apples, peeled and chopped.
03 - 5 tablespoons cranberry sauce.
04 - 2 tablespoons wine vinegar or cider vinegar.
05 - 50g butter.
06 - 1 medium leek, finely sliced.
07 - Pinch of sugar (optional).
08 - Salt and black pepper to taste.

# Instructions:

01 - Heat oven to 150°C/130°C fan/300°F.
02 - Remove outer cabbage leaves and core.
03 - Slice cabbage thinly.
04 - Layer in ovenproof pan: cabbage, leek, apples, cranberry sauce.
05 - Season each layer with salt and pepper.
06 - Pour vinegar over layers.
07 - Dot with butter.
08 - Cover and bring to boil on stovetop.
09 - Transfer to oven Bake 2-2½ hours, stirring occasionally.
10 - Check seasoning, add sugar if needed.

# Notes:

01 - Slice cabbage as thin as possible.
02 - Use large enough pan for expansion.
03 - Stir every 30 minutes.
04 - Don't skip vinegar for flavor balance.
