Marry Me Chicken Soup (Print Version)

# Ingredients:

01 - 1 1/2 lbs chicken, cut up.
02 - 2 tsp salt, divided.
03 - 2 Tbsp butter.
04 - 1 onion, diced.
05 - 3 garlic cloves, minced.
06 - 1/4 tsp black pepper.
07 - 1/2 cup sun-dried tomatoes, sliced.
08 - 3 Tbsp tomato paste.
09 - 6 cups chicken broth.
10 - 1 tsp dried thyme.
11 - Red pepper flakes if you want.
12 - 8 oz shell pasta.
13 - 5 oz baby spinach.
14 - 3/4 cup heavy cream.
15 - 1/2 oz parmesan cheese, more for serving.

# Instructions:

01 - Season cut chicken with 1 tsp salt.
02 - Melt butter in big pot. Cook chicken in 2 batches till done (4-6 mins each). Take out.
03 - Cook onion, garlic, pepper, 1 tsp salt till soft (3-4 mins).
04 - Add tomatoes and paste. Cook 2-3 mins.
05 - Add broth, thyme, pepper flakes. Boil.
06 - Add pasta. Simmer 10-12 mins.
07 - Put chicken back. Add spinach, cream, cheese. Cook 2 mins. Add salt and pepper to taste.

# Notes:

01 - Can use pre-cooked chicken.
02 - Cook pasta separate if eating later.
03 - Good 4 days in fridge.
