Combine self-rising flour and Greek yogurt in a bowl. Knead the dough, making sure you have plenty of flour as the dough can get sticky without an ample amount.

Place dough on a flat, floured surface. Roll out flat using a rolling pin, creating a rectangular shape.

Brush the flattened dough with melted butter. Mix cinnamon and brown sugar, then sprinkle a generous amount over the buttered dough.

Roll the dough into a log shape. Cut into smaller pieces (about 12 rolls), then place in an 8x8 baking dish (preferably glass).

Bake in the oven at 365 to 375 degrees F for 25 minutes. Note that oven temperatures may vary.

While rolls are baking, mix powdered sugar and milk to create the icing glaze.

Pour portions of sugar or stevia into separate mason jars. Add 2-3 drops of food coloring (green, purple, and yellow) to each jar. Close lids and shake continuously for about 30-45 seconds until desired color is achieved. The more drops you add, the richer the color will be.

Brush the warm cinnamon rolls with icing once they're out of the oven. Sprinkle with the green, yellow, and purple colored sugar in sections to create a Mardi Gras effect.
