Easy Sheet Pan Salmon Dinner (Print Version)

# Ingredients:

→ Salmon & Seasonings

01 - 4 salmon fillets (4-6 ounces each)
02 - ½ teaspoon paprika
03 - ½ teaspoon garlic powder
04 - ¼ teaspoon smoked paprika
05 - ¼ teaspoon cayenne pepper
06 - Olive oil for drizzling
07 - Salt and pepper to taste

→ Vegetables

08 - 1 pound brussels sprouts, halved
09 - 4 carrots, peeled and cut into 1-inch pieces
10 - 1 red onion, cut into wedges
11 - Olive oil for roasting
12 - Garlic powder to taste
13 - Salt and pepper to taste

→ Maple Mustard Sauce

14 - 2 tablespoons dijon mustard
15 - 2 tablespoons maple syrup
16 - 2 tablespoons fresh parsley, chopped
17 - ¼ teaspoon apple cider vinegar
18 - Pinch of smoked paprika
19 - Salt and pepper to taste

# Instructions:

01 - Set your oven to 400°F (200°C) to get nice and hot for roasting.
02 - Prep your brussels sprouts, carrots, and onion. Spread them on a sheet pan, drizzle with olive oil, and season with garlic powder, salt, and pepper.
03 - Get those veggies roasting first for 25-30 minutes until they start to caramelize.
04 - While vegetables are roasting, whisk together your maple mustard sauce ingredients until smooth and well combined.
05 - After giving the vegetables a good toss, nestle the salmon fillets in the center of the pan. Season them with your spice mix, brush with sauce, and drizzle with olive oil.
06 - Return the pan to the oven for about 15 minutes until the salmon is cooked to your preferred doneness.
07 - Pour the remaining maple dijon sauce over everything just before serving.
