Mango Salsa with Mild Kick (Print Version)

# Ingredients:

01 - 3 mangoes, peeled, seeded, and cut into ½ inch chunks (approximately 4 ½ cups)
02 - ¾ cup red bell pepper, stemmed, seeded, and diced
03 - ¼ cup chopped jalapeño peppers, seeded
04 - 1 small white onion, peeled and diced (approximately 1 cup)
05 - 3 tablespoons fresh cilantro, chopped
06 - ½ cup lime juice

# Instructions:

01 - Combine all ingredients in a stock pot and bring to a boil.
02 - Reduce heat and simmer for 5 minutes.
03 - Ladle the salsa into prepared jars, leaving ½ inch headspace.
04 - Process jars in a water bath canner for 15 minutes for half pints and 20 minutes for pints, adjusting for altitude.
