Lemony Linguine with Vegetables (Print Version)

01 - 8 ounces whole-wheat linguine or fettuccine
02 - 4 cloves garlic, thinly sliced
03 - ½ teaspoon salt
04 - ¼ teaspoon ground pepper
05 - 3½ cups water
06 - 1 9-ounce package frozen artichoke hearts
07 - 6 cups chopped mature spinach
08 - 2 cups peas, fresh or frozen
09 - ½ cup grated Parmesan cheese, divided
10 - ¼ cup half-and-half
11 - 1 tablespoon lemon zest
12 - 3 to 4 tablespoons lemon juice

# Instructions:

01 - Combine the pasta, sliced garlic, salt, and ground pepper in a large pot. Add water and bring to a boil over high heat. Stir frequently and boil for 8 minutes until partially cooked.
02 - Add the artichoke hearts, chopped spinach, and peas to the pot. Cook, stirring frequently, until the pasta is tender and the water has almost evaporated, 2 to 4 minutes.
03 - Remove the pot from heat and stir in half of the grated Parmesan, half-and-half, lemon zest, and lemon juice to taste. Let stand for 5 minutes, stirring occasionally.
04 - Sprinkle the remaining Parmesan cheese over the dish before serving.
