Sweet Lemon Puppy Chow Recipe (Print Version)

# Ingredients:

→ Base Ingredients

01 - 6 cups Rice Chex cereal
02 - 4 tablespoons salted butter, melted
03 - 10 ounces white candy melts, vanilla-flavored

→ Lemon Flavoring

04 - 1 teaspoon fresh lemon zest, divided
05 - 2 tablespoons fresh lemon juice

→ Coating

06 - 2 - 2 1/2 cups powdered sugar

# Instructions:

01 - Add Rice Chex cereal to large mixing bowl.
02 - Stir together melted butter, 1/2 teaspoon lemon zest and lemon juice. Pour over cereal and gently toss to coat evenly.
03 - Microwave white candy melts on high 1 minute. Stir and continue heating in 30-second increments until smooth, stirring between each heating.
04 - Pour melted candy over cereal and gently toss until evenly coated.
05 - Add 1 cup powdered sugar and toss to coat. Add remaining 1-1 1/2 cups sugar for desired coating thickness.
06 - Transfer to serving bowl and sprinkle with remaining 1/2 teaspoon lemon zest for flavor and color.

# Notes:

01 - Melt chocolate slowly to prevent seizing
02 - Avoid overmixing to prevent breaking cereal
03 - Some chunks are desirable in final texture
