Potato Pops (Print Version)

# Ingredients:

01 - 2 cups mashed potatoes (leftover or fresh)
02 - 5 tablespoons cornstarch or arrowroot powder
03 - Cooking spray

# Instructions:

01 - Add the mashed potatoes to a bowl with the cornstarch, and mix until a dough is formed. The dough should be almost like a thick gnocchi dough, and should hold its shape easily. Add more cornstarch or flour if needed.
02 - Using clean hands, roll into balls, slightly smaller than a golf ball.
03 - Transfer to an air fryer. Spray liberally with oil. Air fry at 450°F for 15 to 20 minutes, until the outsides are golden brown.

# Notes:

01 - Pairs well with ketchup, aioli, or vegan green goddess sauce
02 - Can substitute flour if cornstarch/arrowroot unavailable
03 - Can be rolled in seeds, cornmeal or breadcrumbs before cooking
04 - Can be seasoned with spices before forming dough
05 - Can be baked in regular oven on lined baking sheet instead of air fryer
