Key Lime Pie Energy Bites Recipe (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 cup Medjool dates (about 12)
02 - 3/4 cup raw cashews
03 - 1/2 cup shredded coconut
04 - Zest and juice of 4 key limes (or 1 regular lime)
05 - 1 tablespoon maple syrup

→ For Coating

06 - Additional shredded coconut for rolling (about 1/4 cup)

# Instructions:

01 - In the bowl of a food processor combine the dates and cashews. Process until they resemble coarse sand.
02 - Add the coconut, zest and juice of the key limes, and maple syrup, and process until a dough forms. If the dough does not come together, add some water, 1 tablespoon at a time until the dough sticks together when you press it between your fingers.
03 - Form 1-inch balls with your hands and roll them in some shredded coconut (if desired). Place on a parchment-lined plate.
04 - If you like the energy balls on the softer side, enjoy immediately. If you prefer them a bit more firm, freeze for at least 60 minutes before enjoying. Keep in a covered container in the freezer for best results, but they will also keep in the refrigerator.
