Slice the chicken breasts horizontally to create 4 thin fillets. Season both sides with salt and pepper.

Place flour in a shallow dish and coat each chicken piece, shaking off any excess flour.

In a large skillet over high heat, melt most of the butter while reserving about 1 tsp. Add the chicken and cook for 2-3 minutes on one side until golden brown. Flip and cook for another minute.

Lower heat to medium-high. Push chicken to the sides of the pan and add garlic along with the reserved butter. Stir until the garlic softens slightly.

Add vinegar, soy sauce, and honey to the pan. Stir to combine and bring to a simmer, cooking until the sauce thickens slightly (about 1 minute).

Turn the chicken to ensure it's evenly coated in the sauce. If the sauce becomes too thick, add water in small amounts to adjust consistency.

Remove the skillet from heat. Plate the chicken and drizzle any remaining sauce over the top before serving.
