Herb and Lemon Greek Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 8 bone-in chicken thighs

→ Greek Lemon Marinade

02 - 1/3 cup extra-virgin olive oil
03 - 1/4 cup fresh lemon juice
04 - 4 garlic cloves, minced
05 - 1 tablespoon dried oregano
06 - 2 teaspoons dried thyme
07 - 2 teaspoons Dijon mustard
08 - 2 teaspoons kosher salt
09 - 1 teaspoon freshly ground black pepper

# Instructions:

01 - Mix together your olive oil, fresh lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper in a small bowl until well combined.
02 - Place those chicken thighs in a large bowl and pour your marinade over them. Let them soak up all those Greek flavors in the fridge for 1 to 2 hours, or up to 8 hours if you've got the time.
03 - When you're ready to cook, get your oven heating to 350°F (180°C). Transfer the chicken to a baking dish and pour any remaining marinade right over the top.
04 - Pop your chicken in the oven for 40-45 minutes, until it reaches 175°F (80°C) internally. For extra flavor, baste occasionally with the pan juices. Want crispy skin? Turn on the broiler for the last 2-3 minutes.

# Notes:

01 - This Greek-style lemon chicken features juicy, tender thighs in a bright Mediterranean marinade of lemon, herbs, and garlic.
02 - For a beautiful presentation at dinner parties, try garnishing with fresh lemon slices!
