Wash and peel potatoes. Add them to a food processor and process for at least 2 minutes.

Scrape potatoes into a mixing bowl and add egg, flour, salt, and pepper. Stir with rubber spatula until combined.

Heat sauté pan on medium heat. Add oil and heat up.

Scoop dollops of batter into pan, cooking four at a time. Cook for 3 minutes on each side, until browned.

Plate pancakes. Add butter (if using) and maple syrup.
