# Ingredients:

01 - 1 small head iceberg lettuce, chopped into big bite size pieces (5-6 big handfuls)
02 - 1 cup cherry or grape tomatoes, halved (~125g/4oz)
03 - 1 medium Lebanese/Persian cucumber (or 1/2 English cucumber), sliced
04 - 1 carrot, peeled and grated
05 - 1 teaspoon finely chopped parsley or chives (optional)

→ Homemade Dressing

06 - 1 tablespoon apple cider vinegar (or any vinegar of choice)
07 - 3 tablespoons extra virgin olive oil
08 - 1/2 teaspoon Dijon mustard
09 - 1/2 teaspoon cooking/kosher salt (or 1/4 teaspoon table salt)
10 - 1/2 teaspoon black pepper

# Instructions:

01 - Combine all dressing ingredients in a jar and give it a good shake. Take a taste and make it your own - add more oil if you want it creamier, more vinegar for extra tang, or a touch of sugar for sweetness.
02 - Toss all the fresh vegetables together in a large bowl. Pour over your freshly made dressing and give everything a good mix to coat evenly.
