In the first shallow bowl, combine flour, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Beat the eggs in a second bowl. Place the crushed Doritos in a third bowl.

Dredge each cheese triangle in the flour mixture, dip into the egg mixture, and coat completely in the crushed Doritos. Gently press the crumbs to ensure they stick.

Place the breaded cheese triangles on a parchment-lined baking sheet and freeze for at least 30 minutes, or up to 3 hours.

In a large pot or Dutch oven, heat 3-4 cups of vegetable oil over medium heat to 350°F (175°C).

Carefully place a few breaded cheese triangles into the hot oil without overcrowding. Fry for 1-2 minutes per side until golden brown and the cheese is melted.
