Fresh Pineapple Salsa (Print Version)

# Ingredients:

01 - 3 cups diced fresh pineapple (about 1 medium)
02 - 1 red bell pepper, chopped
03 - ½ cup chopped red onion (about ½ small onion)
04 - ¼ cup chopped fresh cilantro
05 - 1 medium jalapeño, seeds and ribs removed, finely chopped
06 - 3 tablespoons lime juice (from about 1 ½ limes)
07 - ¼ teaspoon fine sea salt

# Instructions:

01 - In a medium serving bowl, combine the pineapple, bell pepper, onion, cilantro, and jalapeño. Add the lime juice and salt, and stir to combine.
02 - Season to taste with additional lime juice for more zing or salt for more overall flavor if necessary.
03 - For best flavor, let the salsa rest for 10 minutes or longer before serving. Serve fresh, or store chilled for up to 4 days.

01 - The salsa is best served fresh but can also be chilled for up to 4 days for later use.
02 - For a milder spice level, use half of the jalapeño, ensuring ribs and seeds are removed. For a spicier option, add up to two peppers.
03 - Pineapple alternatives include diced mango, strawberries, cucumber, melon, or tomatoes. The bell pepper can be optional in these variations.
