Soul Warming French Onion Pot Roast (Print Version)

# Ingredients:

01 - 2 pound chuck roast.
02 - 2 tablespoons butter.
03 - Splash of oil.
04 - 3 garlic cloves, minced.
05 - 2 large onions, thinly sliced.
06 - 2 cups beef broth.
07 - 1 tablespoon Worcestershire sauce.
08 - 1 tablespoon apple cider vinegar.
09 - ½ teaspoon onion powder.
10 - ½ teaspoon dried thyme.
11 - 1 bay leaf.
12 - ⅛ teaspoon celery seeds.
13 - 1 tablespoon sugar.
14 - 2-3 tablespoons cornstarch.
15 - ⅓ cup water.

# Instructions:

01 - Season chuck roast generously with salt and pepper. Sear in butter and oil until browned on all sides.
02 - Sauté onions in same pan for 3-4 minutes until slightly softened.
03 - Layer half onions, garlic, seasonings, meat, and remaining onions. Cook on low for 6-8 hours.
04 - Combine all ingredients in Dutch oven. Cook at 275°F for 2½-3 hours until tender.
05 - Remove meat. Add cornstarch mixture to liquid. Simmer until thickened to desired consistency.

01 - Works in slow cooker or oven.
02 - Searing meat adds flavor.
03 - Use larger cooker for bigger roasts.
