French Onion Chicken (Print Version)

# Ingredients:

01 - 2 chicken breasts (1 lb), halved lengthwise.
02 - 2 medium yellow onions, sliced.
03 - 2 tablespoons avocado oil.
04 - 1.5 cups beef broth.
05 - 4 slices provolone cheese.
06 - 1/2 cup grated gruyere cheese.
07 - 1 teaspoon dried rosemary.
08 - 1 teaspoon dried thyme.
09 - 1 teaspoon kosher salt.
10 - 1/2 teaspoon garlic powder.
11 - 1/4 teaspoon black pepper.
12 - 2 teaspoons cornstarch.
13 - Fresh thyme for garnish.
14 - 1/2 pound yellow potatoes, peeled.
15 - 1/2 pound cauliflower florets.
16 - 1 tablespoon salted butter.
17 - 2 tablespoons Greek yogurt.
18 - Salt and pepper to taste.
19 - Garlic powder to taste.

# Instructions:

01 - Season chicken with herbs, salt, garlic powder, pepper.
02 - Cook onions with broth in oil, covered 8 minutes.
03 - Uncover, caramelize 20 minutes.
04 - Remove onions, brown chicken 2 minutes per side.
05 - Mix remaining broth with cornstarch.
06 - Add to pan, thicken 3 minutes.
07 - Return chicken, top with onions and cheese; cover until cheese melts, about 5 minutes.
08 - Boil potatoes and cauliflower until tender.
09 - Process with butter, yogurt, seasonings until smooth.

# Notes:

01 - Can broil 2 minutes for extra browning.
02 - Onions can caramelize longer if desired.
03 - Double mash recipe for larger portions.
04 - Makes 3-4 servings.
