Flank Steak with Vegetables (Print Version)

# Ingredients:

→ Steak and Marinade

01 - 2 to 2 1/2 pounds flank steak, cut into 6 pieces
02 - Kosher salt
03 - Black pepper
04 - 1/2 cup tamari sauce
05 - 2 cloves garlic, crushed

→ Vegetables

06 - 1 pound asparagus, trimmed
07 - 3 bell peppers, seeded and sliced thinly

→ Cooking Sauce

08 - 1/4 cup balsamic vinegar
09 - 1/3 cup beef broth
10 - 2 tablespoons unsalted butter

→ Other

11 - Olive oil spray

# Instructions:

01 - Season steak pieces with kosher salt and black pepper. Place them into a large zip-top bag with tamari sauce and crushed garlic. Seal the bag and massage to coat steaks evenly. Refrigerate to marinate for at least 1 hour or up to overnight.
02 - Remove steaks from the marinade and discard the marinade. Place the steaks on a flat surface. Divide asparagus and bell peppers equally among the steak pieces, placing them in the center. Roll the steak around the vegetables and secure with toothpicks.
03 - Preheat the air fryer to 400°F (200°C).
04 - Working in batches, place steak bundles into the air fryer basket. Spray exposed vegetables lightly with olive oil spray. Cook for 5 minutes.
05 - Remove the steak bundles from the air fryer and allow them to rest for 5 minutes before slicing or serving.
06 - While the steak bundles rest, heat balsamic vinegar, beef broth, and butter in a small saucepan over medium heat. Whisk to combine and cook until thickened and reduced by half. Season with salt and pepper to taste.
07 - Pour the sauce over the steak bundles prior to serving.
