Easy Ground Turkey and Zucchini Skillet (Print Version)

# Ingredients:

→ Protein

01 - 1 pound lean ground turkey or lean ground beef
02 - 1 teaspoon salt
03 - ½ teaspoon black pepper
04 - ½ teaspoon chili powder
05 - ½ teaspoon dried oregano
06 - ¼ teaspoon paprika
07 - 1 teaspoon minced garlic

→ Vegetables

08 - 1½ tablespoons olive oil or avocado oil
09 - 2 medium zucchinis, cubed
10 - 1 bell pepper, any color, cut into 3/4-inch pieces
11 - ½ white or yellow onion, cut into 3/4-inch pieces
12 - ½ teaspoon salt
13 - ½ teaspoon garlic powder
14 - ½ teaspoon onion powder
15 - ½ teaspoon dried oregano
16 - ½ teaspoon dried basil
17 - ½ teaspoon paprika
18 - ¼ teaspoon black pepper
19 - ½ cup water
20 - 2 tablespoons tomato paste
21 - 5 ounces fresh baby spinach

# Instructions:

01 - Add the ground turkey (or beef) to a large skillet over medium-high heat. Use a spatula to crumble the meat. Cook until browned, stirring occasionally.
02 - Stir in salt, pepper, chili powder, oregano, paprika, and minced garlic. Sauté for one more minute until garlic is golden. Remove the cooked protein and set aside.
03 - Reduce heat to medium. Add the oil to the skillet along with the zucchini, onion, and bell pepper. Sprinkle with salt, garlic powder, onion powder, oregano, basil, paprika, and pepper. Stir and sauté, stirring occasionally, until the onion is translucent and the vegetables are tender, about 5 to 10 minutes.
04 - Return the cooked protein to the skillet. Add water, tomato paste, and baby spinach. Stir, cover, and simmer for 5 to 10 minutes until everything is warmed through and the spinach is wilted.
