Easy Taco Stuffed Sweet Potatoes (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 lb ground beef
02 - ½ white onion, chopped
03 - 2 garlic cloves, minced
04 - 14.5 oz canned fire roasted diced tomatoes, not drained

→ Seasonings

05 - 1 Tbsp chili powder
06 - 1 tsp cumin
07 - 1 tsp paprika
08 - ½ tsp garlic powder
09 - ½ tsp onion powder
10 - ½ tsp salt
11 - ½ tsp black pepper

→ Additional Ingredients

12 - 2 sweet potatoes
13 - Olive oil
14 - Taco toppings, such as guacamole, cheddar cheese, pico de gallo, sour cream

# Instructions:

01 - Preheat your oven to 220°C (425°F) and line a baking pan with parchment paper. Wash and scrub the sweet potatoes to remove any dirt, then pat them dry. Using a large fork, poke a few holes over the surface of each potato. Rub with olive oil and season with salt and pepper. Place on the prepared pan and bake for 40-45 minutes, or until soft and tender in the center.
02 - Heat a splash of olive oil in a large sauté pan over medium-high heat. Once hot, add the minced garlic and chopped onions. Cook until tender, then add the ground beef and seasonings. Sauté the beef until browned and cooked through, about 3-4 minutes. Add the canned fire roasted diced tomatoes (undrained) and continue cooking for another 5-7 minutes until most of the liquid is absorbed.
03 - Slice each cooked sweet potato in half lengthwise and fluff the inside flesh with a fork. Spoon the prepared beef taco mixture into each potato half, or serve them as halves if preferred.
04 - Top the stuffed sweet potatoes with your choice of taco toppings such as guacamole, cheddar cheese, pico de gallo, sour cream, or others, and enjoy.
