Wash and dry apples thoroughly. Insert sticks firmly into apples. Place on wax paper-lined cookie sheet sprayed with cooking spray.

Combine sugar, corn syrup and water in heavy saucepan over medium heat. Boil until candy thermometer reaches 300°F (hard crack stage).

Remove from heat and carefully stir in red food coloring, standing back to avoid splashes.

Dip apples one at a time in candy mixture, swirling to coat. Allow excess to drip off.

Place coated apples on prepared sheet and let cool until candy hardens completely.
