Slice the block of mozzarella cheese into thick, rectangular sticks (approximately 3 inches long and ½ inch thick).

Prepare three bowls: one with flour, one with whisked eggs, and one with a mixture of panko breadcrumbs, plain breadcrumbs, cayenne pepper, smoked paprika, garlic powder, onion powder, salt, and pepper.

Coat each mozzarella stick in flour, then in egg, and then in the breadcrumb mixture. Repeat the egg and breadcrumb steps for a double coating and place the breaded sticks on a tray.

Freeze the breaded mozzarella sticks for 15-20 minutes to set the coating.

Heat 2 inches of avocado oil in a deep pan to 375°F (190°C). Fry the mozzarella sticks for 1-2 minutes until golden and crispy. Drain on a wire rack.

In a saucepan, melt the butter. Add cayenne pepper, brown sugar, smoked paprika, garlic powder, chili powder (optional), hot sauce, and salt. Whisk until smooth and combined.

Dip the fried mozzarella sticks into the hot glaze to coat them evenly. Serve immediately with ranch or blue cheese dressing.
