Creamy Garlic Chicken Pasta (Print Version)

01 - 10.5 oz (300 g) pasta
02 - 1 tablespoon olive oil
03 - 1 tablespoon (20 g) unsalted butter
04 - 1 lb (450 g) chicken breast, cut into 1-inch pieces
05 - 1 medium shallot, finely diced
06 - 4 garlic cloves, minced
07 - ½ tablespoon Italian seasoning
08 - ⅓ cup (75 ml) dry white wine
09 - 1 cup (200 ml) heavy cream (double cream)
10 - ½ cup (50 g) Parmesan, grated
11 - A handful fresh parsley, chopped
12 - Salt and freshly ground black pepper, to taste

# Instructions:

01 - Bring a large pot of water to a boil, add salt, and cook pasta according to package directions. Reserve 2 cups of pasta water before draining.
02 - Heat the olive oil in a large pan or heavy-bottomed pot, melt the butter, and add the chicken breast. Cook for 5-6 minutes over medium heat until thoroughly cooked.
03 - Stir in the shallot and cook for 1 minute, then add minced garlic and cook for 30 seconds.
04 - Stir in the Italian seasoning, deglaze the pan with dry white wine, and cook for 1-2 minutes until the alcohol evaporates.
05 - Stir in the heavy cream and cook for 1-2 minutes until the sauce thickens. Add the cooked pasta and toss to coat. Add a splash of reserved pasta water if sauce is too thick.
06 - Stir in grated Parmesan and fresh parsley. Season to taste with salt and black pepper. Serve immediately.
