Creamy Chicken Gnocchi (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 30g (2 tablespoons) unsalted butter.
03 - 350g (12 oz) chicken breast, diced.
04 - 4 garlic cloves, minced.
05 - 75ml (1/3 cup) dry white wine.
06 - 1 teaspoon Italian seasoning mix.
07 - 400ml (1 1/2 cups) chicken stock.
08 - 180g (6.3 oz) cream cheese.
09 - 500g (1 lb) gnocchi.
10 - 100g (3.5 oz) baby spinach, roughly shredded.
11 - 30g (1/4 cup) grated Parmesan.
12 - Freshly ground black pepper to taste.

# Instructions:

01 - Heat olive oil in large deep pan and melt butter until foaming.
02 - Add diced chicken breast, cook 4-5 minutes over medium heat until golden. Add garlic and cook 1 minute more.
03 - Add wine and cook 1-2 minutes until mostly evaporated. Stir in Italian seasoning and stock. Bring to simmer.
04 - Stir in cream cheese, breaking it down with spoon until sauce is smooth and creamy.
05 - Add gnocchi and spinach, cover and cook 3-5 minutes. Turn off heat, stir in Parmesan and season with pepper.

01 - Ready in just 20 minutes.
02 - Can use frozen gnocchi.
03 - Serve immediately for best results.
