Creamy Lasagna Soup Recipe (Print Version)

# Ingredients:

→ Soup Base

01 - 1 tablespoon olive oil
02 - 1 lb ground Italian sausage
03 - 1 small onion, finely chopped
04 - 3 garlic cloves, minced
05 - 5 cups chicken broth
06 - 1 cup heavy cream
07 - 1 cup Alfredo sauce
08 - 8 lasagna noodles, broken into bite-sized pieces

→ Seasonings

09 - 1 teaspoon Italian seasoning
10 - 1/2 teaspoon crushed red pepper flakes (optional)
11 - Salt and pepper to taste

→ Cheesy Topping

12 - 1 cup ricotta cheese
13 - 1/2 cup shredded mozzarella cheese
14 - 1/4 cup grated Parmesan cheese
15 - 1 tablespoon fresh parsley, chopped (optional)

# Instructions:

01 - Heat olive oil in large pot over medium heat. Cook sausage until browned, breaking into small pieces. Remove excess grease if needed.
02 - Add onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute until fragrant.
03 - Pour in chicken broth and bring to simmer. Add Italian seasoning, red pepper flakes, salt, and pepper.
04 - Add broken lasagna noodles and simmer 10-12 minutes until tender, stirring occasionally to prevent sticking.
05 - Lower heat, stir in heavy cream and Alfredo sauce. Simmer 2-3 minutes to meld flavors.
06 - Combine ricotta, mozzarella, Parmesan, and parsley in small bowl until smooth.
07 - Ladle soup into bowls, top with cheese mixture and optional extra parsley.
