Cowboy Butter for Steak (Print Version)

# Ingredients:

01 - 8 tablespoons unsalted butter, softened.
02 - 2 tablespoons finely diced fresh parsley.
03 - 1 tablespoon finely diced fresh chives.
04 - ½ teaspoon finely diced fresh thyme leaves.
05 - 1 garlic clove, finely grated.
06 - 2 teaspoons lemon juice.
07 - 1 teaspoon Dijon mustard.
08 - ¾ teaspoon smoked paprika.
09 - ½ teaspoon Worcestershire sauce.
10 - ½ teaspoon chili flakes.
11 - ½ teaspoon salt.
12 - ¼ teaspoon black pepper.
13 - 2 sirloin steaks (220g/8oz each).
14 - 1 tablespoon vegetable oil.

# Instructions:

01 - Mix together softened butter with herbs, garlic, lemon juice, mustard, and all seasonings in a bowl.
02 - Pat steaks dry with paper towels. Season both sides well with salt and pepper.
03 - Get a heavy pan very hot over high heat. Add oil and let it heat for a few seconds.
04 - For medium-rare, cook steaks 2 minutes each side without moving them.
05 - Take steaks off heat and let rest 5 minutes.
06 - Top each steak with desired amount of cowboy butter.

# Notes:

01 - Butter should be soft but not melted.
02 - Can make butter ahead and store in fridge 4-5 days.
03 - Works with any cut of steak.
04 - Leftover butter can be frozen.
