Cottage Cheese Brownies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1/2 cup chocolate chips or chopped chocolate, melted
02 - 1 cup cottage cheese
03 - 1 tsp vanilla extract
04 - 1 egg
05 - 1/4 cup melted butter or avocado oil
06 - 3/4 cup milk
07 - 1/2 cup sugar, coconut sugar, or sugar-free alternative

→ Dry Ingredients

08 - 1/2 cup cocoa powder
09 - 3/4 cup whole wheat flour (preferably King Arthur white whole wheat)
10 - 1/2 tsp baking soda
11 - 1/4 tsp salt

→ Mix-ins

12 - 1/3 cup mini chocolate chips

# Instructions:

01 - Preheat oven to 350 degrees F.
02 - Add cottage cheese, melted chocolate, melted butter or oil, vanilla extract, egg, milk, sugar and cocoa powder to a food processor. Process on high until blended. Note: Avoid cracking the egg right on top of the melted chocolate or butter in the food processor if those ingredients are hot.
03 - In a large bowl, combine whole wheat flour, baking soda and salt.
04 - Combine blended wet ingredients with dry ingredients and mix until just combined. Fold in mini chocolate chips.
05 - Transfer batter to a 9x9" baking dish lightly oiled or lined with parchment paper.
06 - Bake for 20-25 minutes in the oven, or until a toothpick inserted in the center comes out clean. Different ovens may vary so make sure to test the center before removing from the oven.
07 - Allow brownies to cool completely before slicing into 16 pieces.
