Classic Split Pea Soup (Print Version)

# Ingredients:

→ Soup Base

01 - 16 oz green split peas
02 - 1 medium onion, diced
03 - 2 cloves garlic, minced
04 - 2 medium yellow or Yukon potatoes, peeled and cubed
05 - 3 ribs celery, diced
06 - 2 small carrots, diced
07 - 6 cups vegetable broth or vegan chicken broth
08 - 2 cups water, as needed to thin

→ Seasonings & Additions

09 - 2 tbsp neutral oil (such as avocado oil)
10 - 2 tsp fresh thyme, chopped
11 - 2 bay leaves
12 - 3 dashes liquid smoke, or more to taste
13 - 1 pinch salt and pepper, or more to taste

# Instructions:

01 - Heat the oil in a large pot on medium heat. Add the onions and sauté for 5-8 minutes or until translucent. Season with salt and pepper.
02 - Add the celery, garlic, thyme, bay leaves, and split peas. Mix well and cook for 2 minutes or until the garlic is fragrant. Add the broth, cover, and cook on medium-low heat for 20-25 minutes or until the peas begin to break down.
03 - Add the potatoes, carrots, and liquid smoke. Continue cooking for another 20-25 minutes or until all ingredients are soft and the soup thickens. Thin with up to 2 cups of water to reach desired consistency.
04 - Check for seasoning and adjust with salt and pepper. Remove the bay leaves before serving. Serve hot.

# Notes:

01 - Pick through the split peas to remove any debris and rinse thoroughly before using.
