Preheat the oven to 350°F. Grease a mini muffin pan with non-stick spray or oil, or line with mini muffin liners for easy removal.

In a large mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup if using, baking powder, and salt. Stir until the mixture is uniform and well-blended.

Let the batter stand at room temperature for approximately 5 minutes to allow the oats to absorb moisture and improve the final texture.

Spoon the batter evenly into the prepared mini muffin pan, filling each cup nearly to the top. Avoid overfilling to ensure even baking.

Place the pan in the preheated oven and bake for 18 to 20 minutes until the tops are lightly golden and a toothpick inserted in the center comes out clean. Monitor closely at the end of baking, adding 2–3 minutes if needed for even color.

Remove the pan from the oven and cool the bites in the pan for a few minutes. Transfer to a wire rack and allow to cool completely for best texture and handling.
