Watch as the toffee mixture bubbles and changes color. When it resembles the color of raw almonds, remove it from the heat (approximately 5-8 minutes).

Quickly stir in the vanilla extract and pour the mixture onto the prepared baking sheet. Use an offset spatula to spread it evenly to your desired thickness.

In a microwave-safe glass bowl, heat the Ghirardelli white chocolate wafers for one minute. Stir until smooth.

Pour the melted white chocolate over the warm toffee. Immediately sprinkle with the cinnamon sugar blend.
