Chocolate Cherry Coconut Truffles (Print Version)

# Ingredients:

→ Base Ingredients

01 - 150 grams (1 and 1/2 cups) Digestive biscuits or graham crackers
02 - 50 grams (1/2 cup) desiccated coconut, plus extra for rolling
03 - 120 grams (3/4 cup) glaced cherries

→ Chocolate Components

04 - 100 grams (2/3 cup) milk chocolate
05 - 150 grams (1 cup) dark or semi-sweet chocolate

→ Binding Ingredients

06 - 250 ml (1 cup) sweetened condensed milk

# Instructions:

01 - Crush your biscuits or cookies until they become fine crumbs using either a food processor or rolling pin. Transfer the crumbs to a large bowl and mix together with the coconut.
02 - Finely chop both the glaced cherries and milk chocolate. Add these to your crumb mixture and stir until well combined.
03 - Melt the dark chocolate in the microwave carefully. Once melted, combine it with the sweetened condensed milk until smooth.
04 - Working quickly before the chocolate sets, pour the chocolate-condensed milk mixture over your dry ingredients. Stir thoroughly until everything is well combined. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
05 - Once chilled, take approximately one teaspoon of mixture at a time and carefully roll into balls. Roll each truffle in additional desiccated coconut to coat. Store in the refrigerator for up to 5 days.
