Chicken Parmesan Meatballs (Print Version)

# Ingredients:

01 - 1 pound ground chicken.
02 - 1 small yellow onion, finely diced (½ cup).
03 - 2 garlic cloves, minced.
04 - ½ cup breadcrumbs.
05 - 1 cup grated parmesan cheese, divided.
06 - 1 large egg.
07 - ¼ cup fresh parsley, chopped.
08 - 1 teaspoon Italian seasoning.
09 - ½ teaspoon salt.
10 - ¼ teaspoon black pepper.
11 - 2 cups marinara sauce.
12 - 1½ cups shredded mozzarella cheese.
13 - Fresh basil for garnish.

# Instructions:

01 - Combine chicken, onion, garlic, breadcrumbs, ½ cup parmesan, egg, parsley, and seasonings. Mix gently until just combined.
02 - Add marinara to lidded pan, heat gently while forming meatballs.
03 - Use 3-tablespoon scoop to portion meatballs. Roll with wet hands. Place in sauce.
04 - Cover and simmer 15 minutes, flipping halfway. Internal temp should reach 165°F.
05 - Top with remaining parmesan and mozzarella. Broil 3-5 minutes until bubbly and brown.
06 - Garnish with basil. Serve over pasta, rice or garlic bread.
