Cheesy Mashed Potato Puffs (Print Version)

# Ingredients:

01 - 3 eggs, beaten.
02 - 2 cups mashed potatoes, room temperature.
03 - 1 cup shredded Monterey Jack cheese, divided.
04 - ¼ cup fresh chives, finely chopped.
05 - Salt and pepper to taste.
06 - Sour cream for serving (optional).

# Instructions:

01 - Heat oven to 400°F. Grease 24-cup mini muffin tin.
02 - Combine potatoes, eggs, ¾ cup cheese, and chives. Season with salt and pepper.
03 - Scoop mixture into muffin cups, filling to top.
04 - Sprinkle remaining cheese on each puff.
05 - Cook 15-20 minutes until puffed and golden brown.
06 - Cool 5 minutes. Remove carefully. Serve with extra chives and sour cream if desired.
