01 - 2 tablespoons olive oil
02 - 8 ounces Carbonero peppers, chopped (substitute Scotch Bonnets or Habanero peppers)
03 - 1 medium onion, chopped
04 - 2 peaches, peeled, pitted, and chopped
05 - 1 cup apple cider vinegar
06 - 1/2 cup water (adjust for desired consistency)
07 - 1 tablespoon jerk seasoning blend
08 - 1 tablespoon brown sugar

# Instructions:

01 - Heat a pot to medium heat. Add olive oil and allow it to heat through.
02 - Add peppers and onion to the pot. Stir and cook for 6-7 minutes until softened.
03 - Add the chopped peaches to the pot and cook for another 2-3 minutes to soften.
04 - Add vinegar, water, jerk seasoning, and brown sugar to the pot. Stir to combine.
05 - Reduce the heat to low and simmer for about 10 minutes to allow the flavors to develop.
06 - Allow the mixture to cool, then pour it into bottles or jars for storage.
