Caramel Apple Cookies (Print Version)

# Ingredients:

01 - 2 cups all-purpose flour.
02 - ½ teaspoon baking soda.
03 - ½ teaspoon baking powder.
04 - ½ teaspoon salt.
05 - 1 teaspoon ground cinnamon, plus ½ teaspoon for apples.
06 - ¾ cup unsalted butter, softened, plus 1 tablespoon for apples.
07 - ¾ cup packed brown sugar.
08 - ¼ cup granulated sugar, plus 1 tablespoon for apples.
09 - 1 large egg.
10 - 1 teaspoon vanilla extract.
11 - 1 cup peeled and finely chopped apple.
12 - 15-20 caramel candies, cut small (or ½ cup caramel bits).

# Instructions:

01 - Heat a skillet and melt 1 tablespoon butter. Add chopped apples with sugar and cinnamon. Cook 3-5 minutes until soft. Let cool fully.
02 - Combine flour, baking soda, baking powder, salt, and 1 teaspoon cinnamon in a bowl.
03 - Beat softened butter with both sugars until fluffy. Mix in egg and vanilla until smooth.
04 - Stir dry mix into wet ingredients. Fold in cooled apple pieces. Chill dough 15-20 minutes if soft.
05 - Take a spoon of dough, flatten it, put caramel in middle. Wrap dough around caramel completely.
06 - Put cookies on lined baking sheet, 2 inches apart. Bake at 350°F for 10-12 minutes until edges turn golden.
07 - Let cookies rest on baking sheet briefly, then move to cooling rack.
