Southern Brown Sugar Pie Squares (Print Version)

# Ingredients:

01 - 1 1/2 cups all purpose flour.
02 - 2 tablespoons granulated sugar.
03 - 1/2 teaspoon salt.
04 - 1/2 cup unsalted butter, cubed and chilled.
05 - 1 teaspoon vanilla extract.
06 - 1 1/2 cups light brown sugar, firmly packed.
07 - 1/4 cup whipping cream.
08 - 2 large eggs, room temperature.
09 - 3 tablespoons unsalted butter, melted.
10 - 2 tablespoons cornstarch.
11 - 1 tablespoon vanilla extract.
12 - 1/4 teaspoon salt.

# Instructions:

01 - Preheat oven to 350 degrees. Line 8-inch square baking dish with parchment paper, leaving overhang for handles.
02 - Mix flour, sugar, and salt in bowl. Cut in chilled butter until pea-sized. Add vanilla and combine. Press into pan.
03 - Bake shortbread crust for 10 minutes.
04 - Whisk brown sugar, cream, eggs, melted butter, cornstarch, vanilla, and salt until smooth.
05 - Pour filling over warm crust and bake 25 minutes until edges are crispy but middle jiggles.
06 - Cool completely then refrigerate 2-3 hours until set. Remove and cut into 16 squares.

# Notes:

01 - Can be stored in refrigerator for 4 days.
02 - Can be frozen for up to 3 months.
03 - Must be jiggly in middle when removed from oven.
