Preheat your griddle to medium heat for several minutes. Add cooking oil and the potatoes. Season with kosher salt, pepper, and your choice of seasoning blend.

Add some water and cover with a melting dome. Cook for a total of 8 to 9 minutes, removing the dome occasionally to mix the potatoes with hibachi spatulas. Add more water each time before covering again.

Remove the dome and add more cooking oil, then add the steak, garlic, kosher salt, pepper, and seasoning blend. Cook for 5 to 6 minutes, mixing the ingredients together with hibachi spatulas periodically.

Add the butter during the last minute of cooking. Mix everything together as the butter melts.
