Heat a large skillet over medium-high heat and add the olive oil. Once hot, add your diced onion and cook until it becomes soft and translucent, about 3-4 minutes.

Add the minced garlic and cook just until fragrant, about 30 seconds. Then add the ground beef, breaking it into small pieces with a wooden spoon as it browns, about 5-7 minutes.

Once the beef is nicely browned, add your cubed sweet potatoes to the skillet. Season everything with cumin, paprika, chili powder, salt, and pepper, stirring well to combine.

If needed, add beef broth or water to help the sweet potatoes cook. Reduce heat to medium-low, cover, and let everything simmer for 12-15 minutes, stirring occasionally, until the sweet potatoes become tender.

If you're using bell peppers or black beans, add them in the last 5 minutes. Once the sweet potatoes are tender, remove the lid and cook for a few more minutes to let any excess liquid evaporate. Top with cheese if desired, and garnish with fresh herbs before serving.
