Ground Beef Sweet Potato Skillet (Print Version)

# Ingredients:

01 - 1 pound lean ground beef
02 - 2 medium sweet potatoes, peeled and cut into ½-inch cubes
03 - 1 medium onion, finely diced
04 - 3 cloves garlic, minced
05 - 1 tablespoon olive oil

→ Seasonings

06 - 1 teaspoon ground cumin
07 - 1 teaspoon paprika
08 - ½ teaspoon chili powder
09 - Salt and freshly ground black pepper to taste

→ Optional Add-ins

10 - 1 cup beef broth or water
11 - 1 bell pepper, diced
12 - 1 can black beans, drained and rinsed
13 - 1 cup shredded cheddar cheese
14 - Fresh cilantro or parsley for garnish

# Instructions:

01 - Heat a large skillet over medium-high heat and add the olive oil. Once hot, add your diced onion and cook until it becomes soft and translucent, about 3-4 minutes.
02 - Add the minced garlic and cook just until fragrant, about 30 seconds. Then add the ground beef, breaking it into small pieces with a wooden spoon as it browns, about 5-7 minutes.
03 - Once the beef is nicely browned, add your cubed sweet potatoes to the skillet. Season everything with cumin, paprika, chili powder, salt, and pepper, stirring well to combine.
04 - If needed, add beef broth or water to help the sweet potatoes cook. Reduce heat to medium-low, cover, and let everything simmer for 12-15 minutes, stirring occasionally, until the sweet potatoes become tender.
05 - If you're using bell peppers or black beans, add them in the last 5 minutes. Once the sweet potatoes are tender, remove the lid and cook for a few more minutes to let any excess liquid evaporate. Top with cheese if desired, and garnish with fresh herbs before serving.
