Baked Shrimp Toast Bites (Print Version)

# Ingredients:

→ Baguette and Seasonings

01 - 1 small French baguette, cut into 1/2-inch thick slices
02 - 1 tablespoon olive oil
03 - 1/4-1/2 teaspoon Cajun seasoning
04 - 1/4 teaspoon fresh cracked black pepper
05 - Kosher salt, to taste
06 - Fresh ground black pepper, to taste
07 - 1/4 teaspoon crushed red pepper

→ Shrimp Mixture

08 - 1 lb shrimp, peeled, deveined, and minced
09 - 1/2 small onion, finely chopped
10 - 1 stalk celery, finely chopped
11 - 3 cloves garlic, minced
12 - 4 ounces cream cheese, cut into small cubes
13 - 1/4 cup shaved Parmesan cheese
14 - 1/4 cup shaved Fontina cheese
15 - 1 green onion, thinly sliced

# Instructions:

01 - Turn the broiler on low. Arrange bread slices on a baking sheet in a single layer. Place under the broiler for 3-5 minutes or until lightly browned. Turn slices over and repeat to lightly brown the other side.
02 - Heat olive oil in a skillet over medium heat. Add shrimp, onion, and celery. Cook for 1 minute, stirring frequently. Add garlic and sprinkle the skillet with Cajun seasoning and black pepper. Cook for another minute, stirring constantly.
03 - Reduce heat to very low. Add cream cheese, Parmesan, and Fontina to the skillet. Stir until cheeses are fully melted and blended. Season with kosher salt and fresh ground black pepper.
04 - Top toasted baguette slices evenly with the shrimp mixture. Sprinkle with crushed red pepper. Bake in a preheated oven at 400°F (200°C) for 10 minutes, or until lightly browned and bubbly.
05 - Sprinkle with green onions and serve immediately.
