Baked Feta Pasta with Cherry Tomatoes (Print Version)

# Ingredients:

01 - 8 oz feta cheese block
02 - 4 cups cherry tomatoes
03 - 2 cloves garlic, minced
04 - 1/3 cup olive oil
05 - 8 oz pasta of your choice

→ Seasonings

06 - 1/4 tsp red pepper flakes
07 - 1/4 tsp oregano
08 - 1/4 tsp dried basil
09 - 2-3 tbsp chopped fresh basil

# Instructions:

01 - Preheat oven to 425°F (220°C).
02 - Add cherry tomatoes to a baking dish and place the feta cheese block in the middle. Add the minced garlic.
03 - Drizzle with olive oil, making sure the feta is coated in oil. Sprinkle with red pepper flakes, dried basil, and oregano.
04 - Bake for 30-35 minutes, until the feta is golden brown and the tomatoes are bursting.
05 - While the feta and tomatoes are baking, boil the pasta according to package instructions. Reserve about 1/3 cup of pasta water before draining.
06 - When the feta and tomatoes are done, remove from oven and stir together to create a creamy sauce. Add some reserved pasta water to thin the sauce if needed.
07 - Add the cooked pasta to the baking dish and stir until pasta is coated with the sauce.
08 - Stir in fresh basil and serve immediately.

02 - You can use any pasta of your choice - grain-free, brown, gluten-free, low carb or veggie pasta all work well in this recipe.
03 - Any kind of feta cheese works in the recipe, but a block of cow's milk Bulgarian or Greek feta cheese is recommended.
04 - For added protein, consider adding chickpeas, tofu, cooked chicken, or shrimp to the pasta.
05 - While leftover pasta isn't usually recommended, you can store this feta pasta in an airtight container in the fridge for up to 2 days.
