Baby Bok Choy Soy Garlic (Print Version)

# Ingredients:

01 - 0.5 pound baby bok choy
02 - 2 teaspoons canola oil or vegetable oil
03 - 2 cloves garlic, minced
04 - 0.5 tablespoon soy sauce
05 - 0.5 tablespoon Chinese mushroom sauce
06 - Sesame seeds for garnish
07 - Salt and pepper to taste
08 - Crushed red pepper flakes to taste (optional)

# Instructions:

01 - Bring a large pot of salted water to a boil. Prepare a bowl of ice water. Once the water is boiling, add the bok choy and cook for 1 minute. Drain and transfer to the ice bath to stop the cooking process. When cool, drain again and dry with a clean towel or paper towels.
02 - Heat the oil in a skillet over high heat. Add the minced garlic and stir-fry until fragrant, about 30 seconds. Add the bok choy and toss to coat, cooking and stirring until just beginning to brown, about 2–3 minutes.
03 - Add the soy sauce and Chinese mushroom sauce to the skillet. Stir to coat the bok choy and cook, stirring, for 1 minute. Transfer to a serving dish, season with salt and pepper, and sprinkle sesame seeds on top as a garnish.
