Avocado Cucumber Salad with Lime (Print Version)

# Ingredients:

→ Salad

01 - 2 large ripe avocados, quartered and sliced into 1 cm slices
02 - 3 cucumbers, approximately 17 cm long, sliced into 4 mm rounds
03 - 1/4 red onion, finely sliced
04 - 2 tbsp finely chopped dill, optional
05 - 2 tbsp roughly chopped coriander/cilantro leaves, optional

→ Dressing

06 - 3 tbsp extra virgin olive oil
07 - 3 tbsp lime juice or lemon juice, more to taste
08 - 1/4 tsp red pepper flakes
09 - 1/4 tsp black pepper
10 - 3/4 tsp kosher salt

# Instructions:

01 - Place all salad ingredients into a large bowl.
02 - Drizzle olive oil and lime juice over the ingredients. Sprinkle with salt, black pepper, and red chili flakes.
03 - Toss gently using your hands, separating the avocado slices as you mix. Taste and adjust lime juice if needed.
04 - Transfer the salad to a serving bowl and serve immediately.

# Notes:

01 - Cucumbers: If using telegraph or English cucumbers (~30 cm long), use 1 1/2 instead of 3.
02 - Fresh herbs: Dill and coriander add great flavor, but parsley can be used as a substitute. Skip if unavailable.
03 - Leftovers: Store in the fridge until the next day. The avocado remains green, but it is best made fresh.
