Avocado Carbonara with Linguini (Print Version)

# Ingredients:

01 - 1 lb linguini noodles
02 - 2 avocados, pit removed and peeled
03 - 2 egg yolks
04 - 2 large leaves of kale
05 - 3-4 cloves garlic
06 - 1/4 cup extra virgin olive oil
07 - 1 1/2 tablespoons lemon juice
08 - 1 teaspoon kosher salt
09 - 1/2 teaspoon paprika
10 - Pinch cayenne
11 - 1 cup pasta water, reserved
12 - 4-5 slices bacon, cooked and crumbled
13 - 1/3 cup parmesan cheese, shredded

# Instructions:

01 - Bring a large pot of water to a boil, salt generously, and boil the linguini noodles until al dente. Reserve 1 cup of pasta water before draining.
02 - In a blender or food processor, combine the avocados, egg yolks, kale leaves, garlic cloves, extra virgin olive oil, lemon juice, salt, paprika, and cayenne. Blend until smooth.
03 - With the reserved pasta water, turn the blender or food processor on low and slowly add the hot pasta water. Mix until smooth.
04 - Pour the avocado sauce over the cooked linguini noodles and stir to fully combine.
05 - Add the crumbled bacon and shredded parmesan cheese. Stir to combine and serve immediately.
