Air Fryer Rack of Lamb (Print Version)

# Ingredients:

01 - 2 pounds (907g) rack of lamb
02 - 2 tablespoons olive oil
03 - ½ teaspoon ground black pepper
04 - 1 teaspoon dried thyme
05 - 1 teaspoon dried basil
06 - ½ teaspoon ground coriander
07 - ½ teaspoon salt
08 - 2 tablespoons finely chopped pistachios or almonds

# Instructions:

01 - Combine salt, pepper, thyme, basil, and coriander in a small bowl.
02 - Brush the lamb with olive oil, rub with the spice mixture until well coated on all sides, and sprinkle with chopped nuts.
03 - Place the lamb in the air fryer basket and roast at 180°C (360°F) for 7 minutes on one side.
04 - Turn the rack of lamb over to the other side and cook for another 7 minutes, or until the lamb reaches about 6-10 degrees below your desired doneness using a digital meat thermometer.
05 - Remove the lamb from the air fryer basket, wrap it in foil, and let it rest for 10 minutes. The internal temperature will rise an additional 6-10 degrees and the juices will redistribute.
06 - Unwrap the lamb, cut into thin slices, and serve with vegetables and sauce.
